Kiri-boshi daikon is a staple in Japanese pantries, not just because of the umami-bursting taste but because the nutrients also become concentrated.
They grow in size by 5-6 times when rehydrated.
Can rehydrate by boiling for 5 minutes, or simply throw into miso soup or stew you are making. If you are using for salads, rehydrate in water for 30 minutes to 1 hour. If you leave in water for 10 hours or more, you get maximum crunchiness in the daikons.
